PROBLEM TO BE SOLVED : To provide a meat-processed food, even in the one obtained by blending the fabric of a meat-processed food with starch by 3 to 15 mass%, free from or reduced in an elastic feeling like rubber caused by the starch, having a meat grain feeling, also free from powder-likeness and having a juicy feeling.
SOLUTION : Provided is a starch-containing meat-processed food fabric characterized in that, in the one containing a meat, starch and soybean flour, the blending amount of the starch in the starch-containing meat-processed food fabric is 3 to 15 mass%, and the NSI of the soybean flour is 70 to 95%. Also provided is a starch-containing meat-processed food characterized in that the starch-containing meat-processed food fabric is used. Also provided are methods for producing the starch-containing meat-processed food fabric and the starch-containing meat-processed food.
