PROBLEM TO BE SOLVED : To provide a manufacturing method of heat treated wheat flour having rich flavor.
SOLUTION : The manufacturing method of heat treated wheat flour includes a heating step of heating a mixture of wheat flour and malt flour without water addition at 50 to 70°C for 3 to 24 hours. The heating step is preferably performed in a closed vessel. The manufacturing method of heat treated wheat flour may include a reheating step of heating the mixture at 130 to 220°C after the heating step. The reheating time is preferably 10 to 60 minutes.
