PROBLEM TO BE SOLVED : To provide a rare chocolate without raising blood sugar level even in the case of diabetic patients and persons of pre-diabetes and without causing a glucose spike, and to provide a method for producing the rare chocolate.
SOLUTION : The method for producing the rare chocolate includes following steps A to F : step A : kneading at least fresh cream with an extract of Momordica grosvenori as a rare material other than cacao mass and a hazel nut paste, and cold-storing the material after the kneading, step B : boiling the material obtained in the step A while carrying out stirring, step C : stirring the material obtained in the step B, the cacao mass, and the hazel nut paste while carrying out pulverization, step D : adding an additive to the material obtained in the step C, and carrying out stirring while pulverizing the resultant mixture, step E : cold-storing the material obtained in step D, and solidifying the cold-stored material, and step F : cutting the material obtained in the step E into a suitable size.
