Enrichment method an extract containing oleocanthal, characterized in that it comprises the following successive steps : a) forming a bisulphite compound by mixing said extract with a bisulphite of alkali metal or alkaline-earth or quaternary ammonium and removing the derivatives that have not reacted with the bisulphite; b) deprotecting the bisulphite compound.
