The invention relates to a method for enriching an extract containing oleocanthal, characterised in that it comprises the following successive steps : a) forming a bisulphite compound by mixing said extract with a bisulphite of an alkaline or alkaline-earth metal or a bisulphite of a quaternary ammonium and removing the derivatives that have not reacted with the bisulphite; b) deprotecting the bisulphite compound. The invention also relates to a method for extracting oleocanthal from virgin olive oil.
