PROBLEM TO BE SOLVED : To provide a method for separating only production-aimed rare sugar with high purity at a high recovery rate from a raw liquid comprising a mixture of rare sugars including the production-aimed rare sugar. SOLUTION : This mass production method for refined rare sugar is characterized in that substrate rare sugar is transformed into the aimed rare sugar by the function of an enzyme for catalyzing isomerization and that the raw liquid obtained is continuously and chromatographically separated as an aimed rare sugar fraction by an artificial moving layer. This method is applied to making refined D-allose of the aimed rare sugar from substrate rare sugar D-psicose. As the raw liquid, a raw liquid is used which is obtained by causing L-rhamnose isomerase derived from Pseudomonasstutzeri to act on substrate sugar. COPYRIGHT : (C)2006, JPO&NCIPI
