PROBLEM TO BE SOLVED : To provide crystal glucides composed of D-glucose and D-fructose, a method for producing the same, and food and drink including the glucides.
SOLUTION : The crystal glucides are produced from liquid sugar essentially composed of D-glucose and D-fructose. The crystal glucides are composed of composite crystal glucides comprising D-glucide and D-fructose and/or crystal glucides in which D-fructose is taken into an aggregate of D-glucose mono-hydrate crystals. The production method uses the same. According to this invention, crystal glucides containing rare sugar can be produced from liquid sugar containing D-glucose and D-fructose without requiring special production devices.
