PROBLEM TO BE SOLVED : To provide a method for manufacturing a frozen flesh by peeling skin of vegetables and fruits which are easy to brown such as banana, without browning of them, without applying such as antioxidant, and without using a dedicated facility for such as brine.
SOLUTION : This method includes : a freezing process which freezes vegetables and fruits; a thawing process which thaws pericarp of the frozen vegetables and fruits by source of heating; and a decortication process which decorticates the thawed pericarp. The surface part of the flesh thawed with epidermis in the thawing process is promptly frozen by coldness accumulated in core of the flesh after end of the decortication process. A re-freezing process is performed after the decortication process if needed.
