PROBLEM TO BE SOLVED : To provide a new fatty acid diester of a rare sugar.
SOLUTION : The fatty acid diester of the rare sugar is a 1, 6-fatty acid diester of the rare sugar comprising one ketose selected from the group consisting of D-psicose, D-tagatose, D-sorbose, L-fructose, L-psicose, L-tagatose and L-sorbose, wherein the residues of the fatty acid are the same or different, and each a residue derived from a 6-22C saturated or unsaturated linear or branched free fatty acid or a derivative thereof. Preferably, the fatty acid diester of the rare sugar is 1, 6-dioctanoyl-D-psicose, 1, 6-didecanoyl-D-psicose or 1, 6-didodecanoyl-D-psicose. The fatty acid diester is produced by bringing the ketose into contact with a fatty acid acyl-donor in the presence of a lipase catalyzing esterification/ester exchange/acylation at both of 1- and 2-position of the ketose.
