PROBLEM TO BE SOLVED : To provide a method for efficiently and simply producing rare galactosyl disaccharides expected as a useful food material or a medicine raw material.
SOLUTION : The method for producing the galactosyl disaccharides is carried out as follows. A substrate containing lactose and optional monosaccharides is reacted with a yeast having ≥1 U β-galactosidase activity based on 1 g of the wet microbial cell weight and/or β-galactosidase derived from the yeast.
