PROBLEM TO BE SOLVED : To provide a new rare saccharide fatty acid ester produced by selectively esterifying a hydroxy group of a rare saccharide, and to provide a method for producing the same.
SOLUTION : This rare saccharide fatty acid ester is expressed by formula I (n is an integer of 6, 8 or 10). The method for producing the rare saccharide fatty acid ester comprises obtaining the rare saccharide fatty acid ester by using lipase and selectively esterifying the hydroxy group of the rare saccharide. Immobilized lipase is used as the lipase, and further a fatty acid vinyl ester is used as a raw material. A residue of the fatty acid comprises an octanoic acid residue, a decanoic acid residue, or a dodecanoic acid residue. A residue of the rare saccharide comprises a D-allose residue. |
