The invention relates to the production of a grain product from Amaranthus seeds and can be used in flour-milling and in cereals production, and in the baking and confectionery industries and in other branches of industry. The technical result of the method presented in this description of the method and of the processing line is an increase in the quality of a product which can be produced from various types of Amaranthus seeds by thoroughly refining the seeds and a reduction in the labour intensity of the refining process. The above-mentioned technical result is produced by a method for producing ground products from Amaranthus seeds, in which the seeds are cleaned, moistened and softened, and then the seeds are divided into components by grinding, by the seed kernels being flattened, the husks of the seeds being removed and the seed germs being removed from the seed kernels. The resulting ground products are graded by sifters with germ middlings and low-grade bran flour being separated out in all of the grading stages and, in the final stage of grading the ground products, endosperm flakes are produced, after which the resulting components are re-ground and flour is produced therefrom, wherein the resulting germ middlings of the low-grade flour is divided into oil and grist, and the grist is then ground and defatted flour is produced.
