PURPOSE : A bakery product with excellent texture and taste, and a producing method thereof are provided to offer soft and moist texture of the product to users.
CONSTITUTION : A producing method of a bakery product comprises a step of adding rare sugar containing D-psicose and D-allose, or isomerized sugar containing the rare sugar when producing the product using grain powder as a main ingredient. 100 parts of main ingredient by weight contains 0.1-100 parts of rare sugar containing D-psicose and D-allose, or isomerized sugar containing the rare sugar by weight. The isomerized sugar containing the rare sugar is obtained by isomerizing D-glucose, D- fructose, or more than two isomerized sugar using more than 0.005mol/l of alkali.
