PROBLEM TO BE SOLVED : To provide a drying method, determining the ending timing of drying in real time in evaporating, eliminating and drying a liquid from a mixture of powder and a liquid, and preventing consumption of powder for determining such timing. SOLUTION : This drying method includes : a step (a) of placing the mixture of powder and a liquid in an atmosphere of reduced pressure; and a step (b) of releasing the reduced pressure atmosphere when the evaporation quantity of liquid reaches a predetermined value, wherein in the course of the step (a), the temperature of the mixture is measured with the passage of time, and the atmosphere of reduced pressure is released based on a temperature change of the mixture. For example, after a change point P where a temperature change transfers from a stable period to a period of a sharp temperature rise appears in a history curve of a temperature change, the atmosphere of evaporating the liquid is released to end drying.
