The invention relates to transgenic plant cells expressing nucleic acid molecules which encode polypeptides with expoxygenase activity wherein said cells naturally contain high levels of linoleic acid; plants comprising said cells and methods to produce plant oils with rare fatty acids, for example epoxy fatty acids.
