CONCENTRATE OF HIGHLY RE-SOLUBLE POTATO TUBER PROTEINS AND METHOD OF ITS PREPARATION

The concentrate of potato tuber proteins with high re-solubility has the re-soluble part at least 75 % and the predominant part of proteins presented in the concentrate is in native form and shows characteristics of biological activity. The concentrate contains regulator of acidity, with advantage NaOH, in amount necessary for reaching of pH of dissolved concentrate ranging between 6.8 and 7.5. The concentrate has reduced contents of glycoalkaloids and other ballast matters. The concentrate is prepared from centrifuged, cooled potato fruit juice with adjusted pH by adding of precipitation additive that is cooled ethanol. Subsequently the resulted protein isolate is washed and preserved for final usage of the protein concentrate in food industry and biotechnological applications.
